Enzo Coccia. We love this man. He is one of the most important pizza makers on the planet. Enzo’s home base is at his Pizzeria, Pizzeria La Notizia in Naples, and he is a major resource and a wealth of knowledge for aspiring pizzaioli and home pizza makers.
One of the key secrets (not so secret) to his success is what he puts on his pizze. He keeps it simple. He uses the best. Check out this quintessential Neapolitan how-to pizza video. Enzo tops his pizza with just a few ingredients, the most important being REAL San Marzano tomatoes. He gets his San Marzano tomatoes from the same guys we do, Edoardo and Paolo from DaniCoop in Salerno. Enzo believes that tomatoes can make or break your pizza. He is totally right.
In this video below, Enzo demonstrates something that we at Gustiamo have been saying for years: a small amount of San Marzano tomatoes go a long way. If you break the tomatoes up in the correct way, as Enzo shows you how to do here, you only need 70-80 grams of tomatoes per pizza! That is just a few spoonfuls!

* A note about yeast. In Enzo’s pizzeria he uses a lievito madre (starter). He tells us that in this video he is using a conventional yeast because this is most likely what home pizza makers will use.
