Every two years Torino hosts Terra Madre Salone del Gusto, a food festival organized by Slow Food. And we always make a point of not missing it! Terra Madre Salone del Gusto is our great chance to meet all our producers and Italian friends. And it is one of our favorite events for discovering what’s new in the good food world.
This year we learned so much about Sicily with Bonetta dell’Oglio, a wonderful chef and expert of all things Sicily. Bonetta, with Filippo Drago, has been teaching us everything we know about ancient Sicilian grains so far. Her workshops at Terra Madre Salone del Gusto were all about preserving Sicilian biodiversity, specifically of the endangered Modicana cow, a Slow Food protected breed and of very precious honeys made by the Sicilian black bee.
One of our favorite moments has been the Bread for Change conference. For its 12th edition Terra Madre Salone del Gusto focused very much on bread making and real flours. Our Sicilian miller Filippo Drago invited us to this inspiring conference, where the Urban Agricultural Bakers, a group of many of the greatest Italian bread personalities, sat at the same table to team up and start revolutionizing the bread world together. Bravissimi!
We had all our producers and Italian friends in one place for one weekend, it doesn’t happen that often! So we did what we do best at Gustiamo, we had a party and had a great time celebrating good food. Our host has been the wonderful breadmaker and pizzaiolo Alessandro Spoto at his Spoto Bistrot in Turin’s very city center. He made special pizzas with Filippo Drago’s flours, made with stone ground Sicilian ancient wheats. And he served them with rich toppings from many of our producers: piennolo tomatoes + mullet bottarga, lardo + alta Langa hazelnuts + asphodel honey from Sardegna, radicchio + traditional balsamic vinegar + Vacche Rosse cheese, ‘nduja + anchovy colatura + small yellow tomatoes. After the pizza, we ended the night with Linguine Faella + Pesto genovese Rossi. It’s been a festa bellissima and many of our friends came by and had a slice of pizza with us, grazie a tutti!
