If you have ever had the extreme privilege of dining at La Subida, you were most certainly impressed by the Vinegar Honey Sorbetto. Of course, La Subida is home to Sirk vinegar production and everything that they do with Sirk vinegar is exquisite. This sorbetto included. Try this recipe, it is beyond refreshing. This recipe is based on the recipe written by the great Faith Willinger.
NB: You do need an ice cream machine for this one!
2 tablespoons Asphodel Honey
1/4 cup sugar
1/2 cup water
1 tablespoon + 1 teaspoon milk
1 tablespoon + 1 teaspoon Sirk Vinegar
2 tablespoons Pianogrillo EVOO
1. Heat the honey, sugar, and water in a saucepan to dissolve
2. Add the milk and cool
3. Emulsify the vinegar, olive oil, and the honey sugar water in a blender
4. Process in your ice cream machine
