Tratturello

The Travaglini family has utilized their passion for farming their olive groves as a means of revitalizing local agricultural traditions. Using organic, sustainable methods of composting and fertilizing, Il Tratturello is produced in limited quantities, with hand numbered bottles. The olives are picked by hand between October and November, collected in nets and pressed within a few hours of harvest. Francesco calls his olive oil Il Tratturello because his olive grove borders a Tratturo, the green highway where in the past, cattle and sheep would travel from the mountains to the sea.
