Producer Luciano Catellani is a third-generation cheese-maker and through his company I Sapori delle Vacche Rosse, he has made it his life’s mission to protect his region’s native “red cows” from extinction. Based in Reggio Emilia, Luciano has 150 cows and he continues to milk all his cows by hand the way that his grandfather did; they live longer, happier lives than other cows because they produce less milk and enjoy a diet that makes them and their milk healthy and clean.
