Gaudenzi

The Gaudenzi olive mill is located in Trevi, a pre-Roman town between Assisi and Spoleto, a region known for its olive cultivation since the time of the Etruscans. The Food and Agriculture Organization of the United Nations has included these trees on their list of world-renowned Agricultural Heritage Systems, which recognizes the ingenuity through which natural resources and human economies have come together to create livelihoods and mutually sustainable ecosystems.
