Learning to harvest produce and preserve the fruits and vegetables of the harvest, was just a fact of life for previous generations. Time was not as rare a commodity then , and peaches were not available in the dead of winter. The quintessential Italian grandmother put up tomatoes, packed fruits in sugar syrups or liquors and prepared vegetables under oil or vinegar. Her pantry lined with rows of home canned fruits and vegetables was a badge of pride. This was the bounty of summer, packed away in precious batches to be brought out and savored on a cold wintry day.
