Rices by Gazzani
Gazzani has been producing superfine rice since 1648. Marco Soave, who inherited the estate a few years ago, still uses the ancient stone mill in his rice production.
The mill is located in Vigasio, near Verona, in the Veneto region on the Graicella River. Sandy soil and abundant spring water make the spot perfect for rice cultivation.
Gazzani grows Carnaroli, Vialone Nano and Vialone Nano Pestelli varieties of rice.
While they can all be used in risotto recipes, there are some differences. Carnaroli, often referred to as the "caviar" of rice, has a high starch content and creamy consistency. Vialone Nano has thicker shorter grains and absorbs seasonings easily. Vialone Nano Pestelli has a coarser consistency, perfect for hearty rustic dishes.
