Parmigiano Reggiano by Caseificio Castellazzo

In Reggio Emilia, at the heart of the region that gave the world Parmigiano Reggiano, Caseificio Castellazzo has been in business for over 100 years: over the years generations of cheese makers have handed down their expertise to their sons and continued to remain faithful to the traditions of their land.

The milk is collected twice from the stables where the cows dwell. These are the most important elements of a unique event which culminates every day, and twice a day, in the milking process.
Afterwards, the milk is brought into the dairy’s tanks, where the master dairyman Valter Paolini’s craftsmanship transforms it, thanks to an old tradition handed down throughout the centuries. Even the smallest flake of this Parmigiano Reggiano will give you the sensation of being part of a timeless “poetry”. All this is the result of the respect for all living creatures which is the most important feature of this land and of its inhabitants.

Normally aged for 24 months, the quality of this Parmigiano is such that it is able to continue developing for an extra 12 months. The result of all this incredible work is a mature cheese still soft and sweet, full of flavor yet not biting, with a good consistency, ready to melt in the mouth, where it releases all the rich flavors and aromas of the milk. The color is an intense pale gold and the flavor has a distinctly nutty character. If you like Parmigiano, you’ll love this – it’s a world apart from most others!
