Small Artichokes in Extra Virgin Olive Oil by Masseria Maida

Masseria Maida's artichokes, the carciofi di Paestum, are prized throughout Italy. They are well-known for their small round heads, spineless stems and beautiful purple color. Picked only between February and May, they are unusually tender while still firm to the bite.
