Sea Salt from Trapani Salt Pans by Vincenzo Gucciardo

Until recently salt was considered a basic commodity... salt was salt. In recent years, we've learned to appreciate and distinguish between distinct varieties of salts and how these salts improve flavors.

Italian sea salt is produced from the low waters of the Mediterranean Sea along the coast of Sicily. Our salt is produced by a salt mill called “moranella”or “chiusa” in the salt pans of Trapani, in Sicily. The mill was built in 1884 and placed inside the natural preserve of Trapani runned by WWF (the nature protection group WWF, World Wide Fund for Nature).

It is a natural salt rich in iodine, fluorine, magnesium and potassium with a much lower percentage of sodium chloride than regular table salt.

The salt pans are filled with sea water in the Spring and left to evaporate relying on the heat of the Sicilian Summer sun and the strong African winds.

Salt is indispensable in the kitchen. Use our sea salt from Trapani sparingly, and it will enhance the flavor of virtually everything you eat.

We love the salt from Trapani. We have been using sea salt for several years, and have found the salt from Trapani is so much better than the Fleur De Sel from France. One might say with a name like Maturo, I'm being bias....maybe I am a little! :- ) My husband, a chef at heart,
