EXTRA VIRGIN OLIVE OIL by definition comes from the first cold pressing of the olives. It contains no more than 0.8% acidity and is judged to have superior taste. There can be no refined oil in EXTRA VIRGIN OLIVE OIL. GUSTIAMO sells nothing but EXTRA VIRGIN OLIVE OIL. Freshly pressed, full of flavor, vitamins, minerals, and anti-oxidants.
Unfortunately, the EXTRA VIRGIN OLIVE OIL label is no guarantee of quality. The biggest food fraud of the 20th century was that some of the biggest olive oil producers systemically diluted EXTRA VIRGIN OLIVE OIL with cheap highly refined hazelnut oil from Turkey. At GUSTIAMO we are vigilant. All the EXTRA VIRGIN OLIVE OIL at GUSTIAMO is from the latest harvest. We insist that our producers have full control of every stage of their olive oil production - "filiera", in Italian - from the quality of each olive cultivar to the timing of the pressing in the producer's own olive mill to the bottling and labeling of the finished product. This way GUSTIAMO is absolutely sure that what ends up on our table and yours is the best possible EXTRA VIRGIN OLIVE OIL.
